Fig & Date Bliss Balls

Ingredients

200g x Dried figs (chopped with stalks removed)

1 x tablespoon coconut oil

2 x heaped tablespoons of soft set honey

150g x Chopped mixed nuts

150g x dates

1 x tablespoon of pumpkin seeds

1 x tablespoon chia seeds

crushed nuts or cocoa powder for dusting / rolling


Method:


1.) In a small saucepan melt your honey and coconut oil together on a low heat until liquid.


2.) Chop up your figs and place into a blender with the honey & coconut oil blend.


3.) Blend until it has combined into a paste like texture.


4.) Add the nuts, dates and seeds into the blender. Blend.


5.) Roll into balls and place on a baking sheet - you can adorn these with chopped mixed nuts or cocoa powder if you like for pretty aesthetic.


6.) place in the freezer for 1 hour to set, then move into the fridge. These will keep in a Tupperware in the fridge for 5 - 7 days.
